Sweet corn salsa recipe


As the name suggests this salsa is a winner with every kid in the house. Salsa is the best snack for any time hunger, the taste is a mix of sweet and tangy flavour.

I served it with some Indian papad cut into a nacho shape and deep fried. Do try it this way as papad is available in every Indian kitchen.

Sweetcorn salsa

Ingredients

  • 2 cups sweet corn kernels
  • 1/2 cup chopped tomato
  • 1/2 cup chopped onion
  • Pinch of black salt
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped capsicum
  • 1 teaspoon black pepper powder
  • 1 tablespoon lemon juice
  • 1 teaspoon salt or as per taste
  • Few coriander leaves for freshness

Method

  • Take a large bowl and add all the given ingredients
  • Give it a mix, now add in black pepper powder, salt, lemon juice and some chopped coriander leaves
  • Mix it well and serve with some fried papad or nachos
  • If you are making in a large batch skip adding salt, and lemon juice. Add when you are serving the salsa

Biscuit Mug Cake


Something yum and delicious, on demand of a cake when kids have here friends at home and you exactly know what these kids will love mug cake.

Now without going for the authentic way of making I prefer baking a biscuit mug cake instantly.

Biscuits here can be of any flavour, but my kids love Parle-G Biscuits so I am using them along with some hide n seek cookies.

Biscuit Mug Cake

  • 1 packet parle g
  • 1 packet Hide n Seek biscuits
  • 1/2 cup milk
  • 1 teaspoon oil
  • 1 teaspoon sugar
  • 1 teaspoon choco chips
  • vanilla essence few drops
  • Pinch of baking powder
  • 1 teaspoon cocoa powder
  • Chocolate syrup for garnish
  • Sprinkler for garnish

Method

  • First, roughly crush the biscuits
  • Take a microwave safe mug, add the biscuits with milk, cocoa powder, sugar, oil, baking powder and vanilla essence
  • Mix this well adjust the consistency if not thick with more biscuits
  • Microwave this for 1 minute
  • Garnish with sprinklers and chocolate syrup

Microwaves can take more time depending on every household. This comes a bit moist not dry like the cake.

Aloo Puri


Struggling for lunch box recipes, don’t worry here’s a simple recipe for any lunch box be it yours or kids, everybody is going to love this. Making them is so simple and quick. Don’t have to bother with any sides here just eat them straight and you will love it.

Aloo Puri

Ingredients

  • 4 to 5 boiled potatoes
  • 250 grams of wheat flour
  • 2 to 3 tablespoons of oil
  • 1 tablespoon salt
  • 1 teaspoon Haldi/turmeric powder
  • 1 teaspoon amchur powder
  • 1 tablespoon garam masala powder
  • 1 teaspoon red chilli powder
  • 2 teaspoon coriander powder
  • 1/2 teaspoon jeera powder
  • 1/2 teaspoon Kala namak
  • 1 teaspoon Kasuri methi
  • Water for kneading the dough
  • Oil for deep frying

Method

  • Take a mixing bowl mash the potatoes add the given spices with salt and oil
  • Mix everything well mixture gets a crumbly texture
  • Leave it for 15 minutes
  • Now add water little by little and knead a dough
  • The dough has to be hard, not sticky if sticky making puri will be difficult, so keep patience while adding water.
  • Let the dough rest for another 15 minutes
  • Heat kadhai with oil
  • Take small portions of the dough and roll it down to puri small circle in shape
  • Add in the kadhai and deep fry on both the sides, till light brown
  • Serve them hot with pickle or curd.

Pan Fried Banana


Love Banana’s then this recipe is just for you and your loved one’s . Simple easy and quick recipe for anytime cravings. My son loves this a lot. Just follow the recipe and you don’t have to bother.

Here we only need sugar, butter, cinnamon powder and some Chopped dry fruit. That’s it…sounds cool…right.

Type of banana used.

We need semi riped banana here, over riped will be too mushy.

Pan Fried banana

Recipe

Ingredients

  • 2 bananas Chopped
  • 1 tablespoon Chopped nuts
  • 1/2 teaspoon cinnamon/ nutmeg powder
  • 3 tablespoon sugar
  • 1 tablespoon butter

Method

  • Take a non stick pan, add butter
  • Let it melt, add in sugar
  • Let the sugar dissolve
  • Now place the Chopped bananas on the butter and fry till golden brown in colour
  • Off the flame, place the fried banana on a serving plate
  • Garnish with cinnamon/ nutmeg powder
  • And some Chopped nuts
  • Pan Fried bananas are ready for serving

Bun Maska


Bun maska is nothing but bread butter, with a little twist here. This Banarasi Bun maska is one of the best bun I have had in my life, simple and sober.

Banaras has a very unique way of toasting their buns, the charred taste of the bun with dollops of butter applied on it makes one craving for more.

With my recent visit to Varanasi I did get the opportunity to taste all the famous stuff Varanasi is famous for. One of them is this Bun maska. To be frank this was my husband’s favourite and I use to wonder what is it…..now after tasting this Bun maska I am in love with it.

So thought of recreating the Bun maska which I had in Varanasi with you guys, so that you can enjoy if not possible to reach 😉

Bun Maska

Ingredients:

  • 2 burger bun or bread slices
  • Amul butter
  • Chaat Masala
  • Black salt/ Kala namak

Method:

  • First cut buns into two slice
  • Apply butter on both the sides of bun or bread
  • Place a grilling stand on fire
  • Keep the buns on them for the smoky taste
  • Turn them quickly to toast on both the sides
  • Remove from fire and keep on a serving plate
  • Apply generous amount of butter on the buns
  • Sprinkle chaat masala and black salt according to taste
  • Place the bun on one another
  • Toast them again on fire quickly
  • Apply butter on top of the buns serve them hot.
  • Bun maska is ready to be enjoyed the Banarasi way.
  • Whole of Purvanchal region enjoys their bun maska in this manner

Chocolate cup balls

I guess we all here are chocolate lovers be it light or dark chocolate. Cooking with chocolate is always fun and in this process you can get your kids involved.

Making chocolate balls are a complete fun process but making the cups can get a bit tricky as they tend to break fast.

If the weather you are working is hot, take special care for the chocolate cups, rest everything is simple.

This can be served at kids birthday party or kitty party. Will definitely be an eye catcher with the guests.

Make these chocolate cup balls two days prior, so that you don’t have to rush in the last moment.

Chocolate Cup Balls

Ingredients :

  • 2 large pack Good day biscuits (or any biscuit)
  • 1 cup milk
  • 1 tablespoon vanilla essence
  • 300 grams melted dark chocolate
  • 2 variety of sprinklers
  • Chocolate syrup for garnish (optional)

Method :

  • Crush biscuits and grind to fine powder
  • Place them in a mixing bowl
  • Knead a soft dough using milk,vanilla essence
  • Roll them into small balls
  • Let them set for 1 hour in refrigerator
  • Meanwhile coat cupcake liners or cups with melted chocolate
  • It should be thick base
  • Flip the cup upside down and let the excess chocolate drip
  • Let this cup set in refrigerator for 1 hour or 2
  • After 2 hours bring cups out of the refrigerator
  • And gently remove the cups without breaking them, this is a bit tricky if one is doing it for the first time.
  • Be patient and do
  • Once the cups are out of the liner, place them again in the refrigerator, so that it doesn’t melt.
  • Getting to the biscuit balls
  • After 1 hour dip the balls in melted chocolate and coat it well on all sides
  • Roll it into sprinklers and place them in a plate to dry
  • When all the balls are coated well, remove the chocolate cups from the refrigerator and place these balls in them
  • Drizzle with some chocolate syrup if you wish
  • Serve them just before the party begins
  • Enjoy this chocolaty cups
